Cold buffet for 80 people?
You can do it different ways depending on if you want it to be a knife and fork do, or a finger type buffet. Ones I have done before,sat at tables have been a slice of ham on the plate,along with a little lettuce,tomato,pineapple and half a boiled egg, then in dishes on the table new potatoes,coleslaw,pickles, waldorf salad and bread buns with er pats. Or if you are wanting to do sandwiches offer a choice of ham,egg mayonnaise,smoked salmon and prawn,that type of thing,both open and closed sandwiches,on white and brown bread. Along with mini pork pies,quiches,nibbles etc. I have found the plated meat goes down better. Allow about 3 potatoes per person,then a dessert dish of each of the other foods. If you are doing this you have to think of who and how you are going to clear the tables unless you use all disposable tableware, also what about cutlery,drinks condiments etc. Easy desserts are sherry trifle or apple pie with cream,both which can be prepared the day before. Amounts, think what you'd like to eat yourself and go from there.
